If you like watching Chef Troi on Fox 40 Live, then you will love her cooking classes!

Classes are held from 7pm to 10pm, and will occur on Wednesday evenings in 2009. Classes range in price from $65 to $85, depending on the menu. This year, you can expect special surprise guests like mixologists, equipment specialists, and even guest chefs! Bring your friends for a fabulous girl's night out, or bring your sweetheart for a unique date. You can book a private class for a special birthday party for friends, or as a corporate team building event. Gift certificates are available. Sign up early, as classes fill up fast and spaces are limited.

Here are some of the special evenings we have planned for you this coming year:

In February, have a date with A Chef's Affair! Chef Troi will be offering her Dinner For Two menus, just in time for Valentine's Day. Purchase a Gift Card for a class, and present it as a gift with our class menu.

 

 

 

February:

A Romantic Dinner for Two: Part 1                                                                                           65.00
            Let Chef Troi show you how to heat things up at home, using ingredients that are sure to thrill. Bring your sweetie, and you are guaranteed to have a date night to remember! We will show you how to prepare aphrodisiacs like Stuffed Figs with Mascarpone, Prosciutto, and Caramelized Onions, Pistachio Encrusted Salmon, Roasted Red Bell Pepper Coulis, and an Asparagus and Strawberry Salad with Champagne Vinaigrette.

A Romantic Dinner for Two, Part  2: Couples in the Kitchen                                             85.00
            Variety is the spice of life! Add some more smoldering recipes to your repertoire, and spend some more time cooking with your sweetheart in our second "Romantic Dinner for Two" class. Make it a special date night, and take home recipes that will have your sweetheart begging for more. We will show you how to prepare a Beet, Goat Cheese, and Pistachio Salad with Peppery Extra Virgin Olive Oil Vinaigrette, a Pumpkin Garlic Sage Risotto, Beef Tenderloin, and a very sexy Breakfast in Bed Frittata with Asparagus and Red Pepper… for that morning after.  "Now I cannot live apart from you...Your words are my food, your breath my wine. March:

Madras (Indian)                                                                                                                               75.00
                        It's March Madras, and we are taking you on an exotic trip. We will show you how to incorporate the vibrant cuisine of India into your life, with no passport required! Throw your own Bollywood inspired extravaganza when you return. Chef Troi will show you our Samosas with Cilantro Mint Sauce, Dried Apricots with Slivered Almonds, Bali-wood Rice, Chicken madras wraps, Lamb Tikka Masala, and other regional favorites. End the class with a refreshing, blended Mango Lassi.

Is your boss coming over for dinner? Did your in-laws just drop by unexpectedly? Having friends over for an impromptu get together? Don't dial out for pizza yet. Wow your surprise guests with this menu of Tenderloin Medallions, Gingered Carrots, and Mini Twice Baked Potatoes. Even your mother in-law will be impressed.

 

April:

Country French- Provencal cuisine                                                                                          65.00
Chef Troi takes you abroad again, this time to the beautiful French region of Provance. Olive oil, lavender, rosemary, marjoram, and tarragon, goat cheese, sausage, lamb, beef, garlic, or even anchovies are sure to make an appearance; we hope you do, too.

Seafood 101                                                                                                                                                65.00
A-hoy there, matey! Come aboard the SS Troi; and cast your nets starboard! We will be frying, sautéing, and seasoning, even preparing fish en papillote. This ship departs at seven, you salty sea-dogs.

            Thai one on! Enjoy a taste of Thailand when Chef Troi shows you how to prepare her famous Thai Noodle Salad. Explore Southeast Asian Cuisine such as Coconut Rice, Chicken Satay with Peanut Sauce, and our delectable Coconut Shrimp.

Enjoy all the flavor of dinner at your favorite steakhouse, without the fancy price tag. Impress your guests with a perfectly cooked Steak Topped with Compound Butter, and elegant side dishes like Creamed Spinach and Crab-Stuffed Mushrooms. June:

My Big Fat Greek Wedding                                                                                                          75.00
Opa! No one does authentic Greek like Chef Troi. Enjoy our Big Fat Greek Salad, Spanokopita, and other Greek favorites such as Stuffed Grape Leaves and Tzadziki. Don't eat meat? We'll make lamb! We will bring the Ouzo, you bring the family.

A Chef's Affair cordially invites you to a cocktail party on Wednesday June 24th, for cocktails and hors d' oeuvres! Our resident mixologist will be on hand demonstrating different drinks that will be sure to make your next cocktail party a hit. July:

Italian                                                                                                                                                 75.00
Un tavolo per due means A Table for Two….. Now that you are speaking Italian, come to our cucina and cook some up! There is more to Italy than marinara sauce… how about Calamari salad, Lamb Osso Bucco, Polenta, and Tiramisu. It will have you saying La Dolce Vita!

Healthy Bistro                                                                                                                                 65.00
Just in time for swimsuit season, Chef Troi gives you healthy, vegetarian selections that are will keep you feeling good and looking great! Enjoy our bright and beautiful Fennel & Beet Salad, Potato-Leek Soup, Stuffed Portobello Mushrooms and more. This class is a must, but the "Speedo" is optional. 

 

August:

California Cruisin'                                                                                                                         65.00
California Cuisine is like non-other, dude. The Golden State has a unique fusion of Mexican and Asian flavors, and fresh local ingredients that can't be found anywhere else. Show off your home state pride after Chef Troi demonstrates San Francisco Cioppino, and recipes featuring Monterey Artichokes, Gilroy Garlic, and local wine! This class is, like, totally radical.

 

Grill Skill                                                                                                                                            75.00
            Take your grill skills from wimpy to WOW! Chef Troi will show you the secrets that will leave your meat perfectly cooked, your grill marks gorgeous, and your marinades versatile and effective. Take it to the next level with garnishes and condiments that will make you the Grill Master.

Cooking for a crowd? It's easier than you think, and it's kind of our specialty. Let Chef Troi show you how to prepare some of our most popular catering items. Your guests will love the Bacon Wrapped Apricots and Individual Salmon en Papillote, you will love how easy it is to prepare a meal for fifteen.

 

October

It's Not that Scary, part One:                                                                                                      65.00
Boo! The kitchen is not a frightening a place when you have basic skills. Learn the basics of sautéing, pan frying, knife techniques, and basic flavor pairings. Chef Troi will show you how to prepare a one pot meal in your Crockpot. A great class for younger ghouls and boys, as well as older scaredy-pants, too.

It's Not that Scary, part Two:                                                                                                       75.00
Take the fear out of food with an intermediate class for those who want to take it to the next level. Chef Troi will demonstrate more sophisticated flavor pairings, substitutions, and cooking without recipes. Our resident equipment specialist will be on hand as well to answer your questions.  The only thing you need to fear is missing this class!

 

November

            'Tis the season…. For holiday parties! Once again, our resident mixologist will show you how to make classic holiday cocktails like Eggnog and Hot Toddies. Chef Troi's hors d' oeuvres will leave you feeling jolly. Now if we could just show you how to finish your holiday shopping early…

Tired of your sister in-laws over cooked turkey? Had it with your aunt's bland stuffing? Why don't you invite the family to your house this year? Chef Troi will show you the secrets to a fabulous Thanksgiving. Cornbread Stuffing, Potatoes, Blue Lake Green Beans with Almonds and Bacon… we will even discuss different turkey techniques like brining. Of course, you can always order our Holiday Helper menu and take it over to grandma's house, instead. Happy Holidays!
